This is because at the time there was not an industry understanding of the nutritional parameters required i.e. when coming up with a gluten free, sugar free, high protein and low carb option, we would still have consultants or chefs using ingredients that had sugar and gluten in them. - Created new menu items by combining a sound understanding of not only the nutritional requirements but also the operational impact that products would have. - Additionally was responsible for integrating these menu items into the business. This involved not only menu development but also working on cost savings by making sure the new product was commercially feasibly.
