In virtue to teach the Danish food scene's representatives (chefs, restaurateurs, farmers, bloggers, journalists...), I organized and planned a series of eight masterclasses in Aalborg, Aarhus, Odense and Copenhagen. The attendees first learned about the historical evolvement of the Danish dairy industry, then participated in a blind tasting of various milks, butters, creams and cheeses which helped them dissociate the texture and flavour of a high quality, small-scale product from its industrial counterpart. Professional chefs also demonstrated how to cook and prepare artisanal dairy products.
