May. 2016Albury, AustraliaSaludos is a Spanish restaurant in Albury. It was established by my Mum and I and together we have seen it flourish into one of the most notable restaurants in the area. The fast paced environment of a restaurant is both challenging and thrilling. As a leader in the business, I love the need for quick and calm decisions in high pressure situations. It's a great feeling to be a souce of information for our staff and I love working with and training people. We do ample work planning functions and special events - restaurants can be incredibly intimate places to celebrate birthdays/milestones and together with our customers we have curated some very beautiful and special events. We've hosted a significant number of corporate events from which we have received positive feedback, my favourite of which is "spending a night at Saludos was like taking a little holiday". The beginning stages of the business were certainly a learning curve. We set clear business objectives which we have since achieved. We had a clearly defined product which we implemented and were able to uphold consistently. Our set up research was thorough, and laid a strong foundation for us to build from. I studied legal considerations, insurance, liquor licences, conducted market research and planned our marketing strategy. I also looked at staffing needs, recipe cards, menu design, the look and feel of the restaurant as well as the physical efforts involved with renovating an interior. Since opening the restaurant I have started my Masters of Business Administration, completed a chef apprenticeship and a WSET Level 2 Sommelier course. During the Covid lockdowns we made frozen paellas that we sold at local supermarkets through out the Riverina. Since re-opening, we have focused on created bookable experiences for guests which have included: degustations, paella master classes and flamenco nights.
