Governing hospitality operations for the 36-seat restaurant: hired, onboarded, scheduled, coached, retained, disciplined, and terminated staff, fostering a cohesive culture. Directed HR and payroll operations; cash flow, accounting, AP/AR, P&L management, and forecasting using Sage Accounting; vendor relations; inventory control; and contract negotiations. Prepared and rolled out luxury policies and procedures, SOPs, and service standards. Developed position-specific HR manuals and a training program, delivering and evaluating front of house, wine, MICROS, and Aloha POS training. Received and tracked reservations utilizing Tock or Open Table, analyzing customer data for marketing purposes. Collaborated with advertising consultants to pinpoint and execute the marketing strategy.
