Evaluated effect of high pressure processing on yellow pine. Subjected samples to high hydrostatic pressure and measured density changes, springback after processing and effects on strength. Modeled heat transfer during sous-vide cooking and air thawing processes by programming an Excel spreadsheet with solutions to partial differential equations. Tested air thawing of tuna loins to determine whether the process is plausible for industry to run a full-scale operation of air thawing. Responsible for building and running pilot-scale thaw system. Investigated effects of high pressure processing on rheological, microbial, and biochemical changes in bovine colostrum Obtained $22,191 in funding for various projects.
