Counsel outpatients using motivational interviewing with consideration of age, culture, income, and learning ability, Develop and provide education and resources to expecting mothers and children up to age 5 who qualify for the WIC program, Distribute benefits for the Farmers Market program to WIC participants Food Service Rotation / Virginia Beach City Public Schools / 10 weeks (400 hours)
Provide in-service lessons to the 500-person food service staff across the district on food safety and allergen information, Teach a Food Handlers Certificate course to over 60 high school-aged students, Create and implement lesson plans to teach 4th and 5th grade students about mindful eating
Outpatient Clinical Rotation / Prosperity Eating Disorders and Wellness / 4.5 weeks (170 hours)
Provide meal support to clients, redirecting disordered eating behaviors, Utilize motivational interviewing and goal setting to counsel clients in recovery from eating disorders, Research, create, and present group nutrition counseling and education topics and materials for adult clients at the facility, Create reference materials for local hospitals to help better serve patients with eating disorders, including non-weight-centric care
Inpatient Clinical Rotation / Sentara Healthcare / 10 weeks (400 hours)
Conduct malnutrition screening for floor patients and intensive-care units in a 580-bed inpatient facility, Counsel patients using motivational interview and educational materials on condition-specific diets, such as low-potassium and very low fat diets for chyle leaks, Utilize the nutrition care process to determine nutrition interventions in the inpatient setting to include enteral and parenteral nutrition calculations and recommendations, dysphagia diets alongside the SLPs, and oral supplementation, Provide two weeks (80 hours) of staff relief in a variety of general medicine, surgical, and specialty units
