I am an experienced Hospitality Executive and worked in Europe, Middle & Far East. I worked in all kind of environments, like restaurants, hotels and catering companies. I opened both, hotels and restaurants, and was responsible for planning and designing menus, implementing and maintaining a high standard of operation, following up and ensuring all new products and processes are rolled out, providing hands-on training throughout the group and assessing and sharing industry best practices. I also had the responsibility for the management and development of staff. During my time here in Ireland I opened several restaurants and do have in-depth knowledge of business development, including new store location acquisitions and store opening plans. My financial acumen includes budgets and forecasting, full P&L responsibility, EBITDA, recipe management from fork to plate. Part of my current responsibility is the purchasing of food and non-food for the group which entails, product sourcing and pricing, rebates and importation of goods with-in the EU as well as from Thailand and China. I also very IT orientated and would know most POS systems, setting up same; and have a very good knowledge of Microsoft office, recipe software, HACCP software etc. I just implemented HACCP management system and we achieved EC 853 registration, plus I would have a very good knowledge of the day to day HACCP requirements on branch level. I also have an excellent knowledge of allergen and nutrition management. My media exposure ranges from TV, I participated in a RTE series called “Taste of Success” and a recent article in “Taste Magazine”, plus some other little exposures on radio and papers.
